Mexican Wedding Cookies

1 cup butter softened
2 cups ground pecans
4 Tablespoons white sugar
2 tsp. vanilla extract
2 cups all purpose flour
powdered sugar for rolling the cookies in

Mix all ingredients well with hands until smooth. Knead slightly and roll into 1" balls. Bake at 325 degress for 40-45 minutes. Roll in powdered sugar while still hot, cool and roll in powdered sugar again. A few pieces of the pecans are finely chopped and not ground. The chopped nuts add texture and I prefer the cookie that way.

Banana Bread

1 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1/3 cup shortening
3/4 cup firmly packed brown sugar
2 eggs
1 cup over ripe mashed banana's (2 or 3)
1/2 cup milk
1/2 cup walnuts (optional)

Preheat the oven to 350 degrees. Sift together flour, salt, and soda and set aside. Cream together shortening and sugar. Add banana's and eggs and mix well. Alternate flour and milk, adding to the mixture. Beat well after each addition. Pour into greased loaf pan. This recipe will make one Henn Loaf Pan, or 3 mini pans full of bread. Bake 55 minutes or until a toothpick inserted comes out clean. Note... if using the small loaf pans the bake time is cut down to approximately 25 minutes.
Zucchini Bread

3 eggs, 3/4 c. oil, 1 c. sugar, 1 tsp. lemon peel, 1 tsp. orange extract, 1/2 tsp. vanilla, 2 tsp. baking powder, 3/4 tsp. salt, 1 tsp. soda, 1/2 tsp. cinnamon, 1/4 tsp. ginger, 2 c. shredded zucchini, 2 1/2 c. flour, 1/2 c. drained, crushed pineapple,
1/2 c. coarsely chopped pecans toasted at 150 degrees for 20 minutes

Toast the pecans and drain the pineapple. Mix all together, alternating flour and zucchini. Pour into your Henn loaf pan which was greased and floured on the bottom only. If too full, put some in a small pan and bake separately. Bake at 350 degrees for one hour until toothpick comes out clean. Cool on rack in pan until cool enough to easily handle; loosen edges and ease out of pan to finish cooling on rack.

I usually double the recipe and use two regular size loaf pans and 1 mini loaf pan. We eat some and I wrap and freeze some for next winter.

Tiramisu

24 Lady Fingers
4 large eggs yolks
6 Tablespoons of sugar
3/4 lb. mascarpone cheese
2 egg whites, beaten in a medium size bowl
until stiff peaks form
1 cup cold strong coffee cooled
2 Tablespoons of vanilla
1/4 cup unsweetened cocoa powder

Beat the egg yolks with sugar until thick and pale in color. Fold the mascarpone into eggs until smooth, then fold the beaten stiff egg whites into the mascarpone mixture thoroughly.

In a medium size bowl combine the coffee and vanilla. Dip the lady fingers quickly into this mixture, one at a time. Place a layer of dipped fingers into a 6x6 dish. Spread half of the mascarpone mixture evenly over the lady fingers and sprinkle with cocoa powder.

Dip remaining lady fingers into coffee and continue with another layer of cheese mixture.Top with remaining cocoa powder.

Chill for at least 4 hours.
I like this best when frozen!!

Pumpkin Cake

3 cups squash or pumpkin
3 eggs ~ beaten
1 12 oz. evapor. milk
3/4 cup white sugar
3/4 cup brown sugar
...3/4 t. salt
1 1/2 t. cinnamon
3/4 t. nutmeg
3/4 t. cloves
3/4 t. salt
1 white cake mix
1/3 cup nuts
1/2 cup melted butter

Preheat oven 350. Grease your large harvest bowl, place butter crock in the center. Mix first 9 ingredients in your 10" mixing bowl. Beat well. Carefully pour batter evenly into harvest bowl. Sprinkle cake mix evenly into batter and press c...ake mix down in with your fingers. (messy) Drizzle butter on top. Sprinkle with nuts. Bake for 1 hour. Cool. Serve with Cool Whip.
Of course you can make this in a 9X13 & serve Cool Whip on the side.

Pig Pickin' Cake

1 box yellow cake mix
4 eggs
3/4 C oil
...1 small can mandarin oranges with juice

Mix all ingredients. Beat 2-3 mins till oranges are blended
( I dump in juice and fold in oranges so you get bites of oranges)
pour into 2 or 3 8" cake pans
. Bake at 350 till done.
2 pans aprx 30 min
3 pans aprx 15-20 min.

Filling/frosting
1 12oz container cool whip
1 large can crushed pineapple with juice lightly drained ( I drain it into cake mix)
1 large box instant vanilla pudding (Dry)

empty pudding into bowl dump in pineappe and remaining juicemix well: fold in cool whip spread on cooled cake. This recipe also calls for a cup of coconut and a 1/2 c chopped pecans ( I leave out both family doesnt like either. I like with all ingredients.

Strawberry Chocolate Nachos

Strawberries appx a pound. sprinkle with sugar and set aside while you prepare chips

Baked Cinnamon Chips

Flour Tortillas, Melted Butter,  Cinnamon Sugar

Preheat oven to 350. Lightly brush one side of each tortilla with melted butter. You could use cooking spray instead of butter. Sprinkle on cinnamon sugar then cut into chips place cinnamon side up on a cookie sheet cook them for appx 13-15 min. Melt chips in a microwave safe bowl with 1 tsp or so of oil (lets it drizzle easier)

Plate up your chips ( that is my 18" Henn platter) sprinkle strawberries over top drizzle with melted chocolate and swirl on whipped cream(canned seems to work best).Dig in!!
All ingredients are apx and depend on how many you are going to make.
